Meal Plan Monday: Cookbooks!

Last week's menu was a two-weeker, so you might think I have nothing to say today. But you'd be wrong!

I have quite the little cookbook collection. I'm not a terribly creative chef and prefer to use a recipe, but I also find I get bored doing the same thing over and over again. So I like to mix things up.

When I plan my menu, I like to grab two or three cookbooks to work from over the next two weeks. This, coupled with my handy dandy monthly notebook that I fill with magazine clippings and print outs of seasonal ideas I want to try, usually gets me through two weeks of planning.

These are the cookbooks I used for the first two weeks of February.
The big brown book is The Parenting Cookbook by Kathy Gunst and the editors of Parenting Magazine. I first browsed this cookbook at a friend's house, and was impressed with the recipes. It has a great combination of kid-friendly recipes and healthy ingredients. We made the molasses cookies today for afternoon snack and they were a big hit!

Next we have A Continual Feast by Evelyn Birge Vitz. I love this book for seasonal recipes to celebrate the church year. The recipes for Lent and Easter are especially good. You can find recipes for the liturgical year as well as the major feasts and festivals of the Christian year as well as recipes specific to various saints' days.

Finally this week I have been cooking from a vintage cookbook, The New Parents' Magazine Family Cookbook. While I deeply despise Parents Magazine, this 1970s cookbook fascinates me. Some of the recipes are quirky and the have some odd ideas about what children will eat and a disturbing propensity to use shortening in unexpected places. Still, there are some gems to be found.

WEEK ONE

MONDAY:
Breakfast: Omelets
Lunch: Bacon-Potato Chowder
Dinner: Sausage, colcannon, and Brigid's Bread
Snacks: Taffy Toast, Fruit

TUESDAY:
Breakfast: Oatmeal
Lunch: Tuna dip (tuna and cream cheese), crackers, veggies
Dinner: Pancakes for candlemas! with bacon
Snacks: Cheese and pretzels, One-Egg Cake

WEDNESDAY:
Breakfast: Pumpkin Oat Bread
Lunch: Cheese noodles and peas
Dinner: Noodle beef casserole and green beans
Snacks:Edible candles, veggies and dip

THURSDAY:
Breakfast: Smoothies
Lunch: Quesedillas
Dinner: Beans and cheese, salad
Snacks: Bread and the last of the homemade jelly, sugar cookies

FRIDAY:
Breakfast: Eggs made to order
Lunch: Tomato soup and grilled cheese
Dinner: Spinach pizza
Snacks: Brownies, St. Agatha Rolls

SATURDAY:
Breakfast: Corn meal waffles
Lunch: Leftovers
Dinner: Beef pot pie
Snacks: Fruit, cabinet snack

SUNDAY:
Breakfast: Cereal, fruit, toast
Lunch: Leftovers
Dinner: At church
Snacks: At Sunday School, cabinet snack

WEEK TWO
MONDAY:
Breakfast: Hard boiled eggs and toast
Lunch: Shells stuffed with tuna salad, ants on a log
Dinner: Sausage casserole, potatoes, veggies
Snacks: Fruit, cookies from the stockpile

TUESDAY:
Breakfast: Oatmeal
Lunch: Egg Salad
Dinner: Homemade baked beans, hot dogs, coleslaw
Snacks: Toll house cookies (homemade, not Nestle!), veggies with dip

WEDNESDAY:
Breakfast: Milk toast (when I was growing up, we called this "Pussycat Soup")
Lunch: Burgers and fried potatoes
Dinner: Clam chowder and popovers
Snacks: Cheese and crackers, gingerbread

THURSDAY:
Breakfast: Blueberry muffins
Lunch: French onion soup
Dinner: Roast, potatoes, veggies
Snacks: Bread spread with peanut butter, loaf cake

FRIDAY:
Breakfast: Cheesy scrambled eggs
Lunch: Leftovers
Dinner: Split pea with ham soup and homemade bread
Snacks: Valentine's pretzels, banana bread

SATURDAY:
Breakfast: Pancakes
Lunch: Leftovers
Dinner: Pizza with the babysitter
Snacks: Cabinet snack, fruit

SUNDAY:
Breakfast: Cereal, toast, fruit
Lunch: Leftovers
Dinner: At church
Snacks: At Sunday School, Cabinet snack

Meal Plan Monday: A two week plan!


This is a bit of a rerun from a Note I made on Facebook, so please forgive me if you've read this before!

Some of it looks not so filled out. We tend to fill out breakfast with fruit and toast and juice. Lunches always have fruit and veggies, usually served with ranch dip, and they're always welcome to peanut butter and jelly if they're still hungry. I have tons of stuff for sides and veggies at dinner-- if all else fails, there's plenty of brown rice, potatoes, and whole grain pasta that we get at the grocery surplus outlet. I also have a pretty full baking cabinet with all the basics stocked up, and that helps.

Lunch: Beef and veggie soup
PM Snack: Homemade chocolate chip oatmeal cookie
Dinner: Spinach manicotti

TUESDAY
Breakfast: Oatmeal

PM Snack: Homemade pudding
Dinner: Spiced lemon chicken, noodles, green beans

WEDNESDAY
Breakfast: Graham gem muffins
AM Snack: Homemade honey whole wheat bread with homemade jam
Lunch: Mac and cheese
PM Snack: Veggies and dip
Dinner: Crab supreme

THURSDAY
Breakfast:Grits
AM Snack: Air-popped popcorn
Lunch: Grilled cheese and leftover soup
PM Snack: Homemade brownies
Dinner: Broccoli soup

FRIDAY
Breakfast: Eggs to order
AM Snack: Homemade soft pretzels

No real plan this week--I need to clean out my freezer so I can defrost it, so I'm just trying to use stuff up. Tonight it was a yummy spring lamb shank stew with potatoes and peas. Tomorrow-- who knows! I do have a ton of bulgar wheat to use, so I'll happily take any suggestions for that!

Ah, it's good to be back to the old routine! One reason I love menu plan Monday is that I make my menus two weeks at a time, so it reminds me what I have going on.

So, without further ado...
Monday: Chicken with potatoes and carrots in the crock pot, green beans
Tuesday: Navy Bean Veggie Soup with fresh bread
Wednesday:Beef moussaka with peas on the side
Thursday: Katie Grace is cooking for us from her American Girl Molly Cookbook-- Vitality meatloaf, biscuits, and volcano potatoes. Oh, and probably leftover peas.
Friday: PIZZA!!!
Saturday: Apple ham bake
Sunday: At church

Prep Work: Make bread, make Harvard beets, make extra corn on the cob and cut and freeze the extras, make salad for tomorrow, make burgers

TUESDAY
Breakfast: Oatmeal
Lunch: Noodle "worm" salad
Dinner: Slow cooker lasagna and green beans
Snacks and Cooking Projects: Soft pretzels
Prep Work: Make breakfast bread for tomorrow, sort out salad bar ingredients

WEDNESDAY
Breakfast: Blueberry Breakfast Bread
Lunch: Salad Bar
Dinner: Chicken paprikash, peas
Snacks and Cooking Projects: Butterscotch Brownies
Prep Work: Make bread.

THURSDAY

Wednesday: Mom's Stew and Popovers

Thursday: Cheese enchiladas, chips and salsa

Friday: Pizza!

Saturday: Roast chicken, potatoes, and peas

Sunday:Chicken stir fry

And, on a somewhat unrelated note, I can't keep this blog template. It's making the spacing all crazy. So, if the spacing doesn't seem crazy to you, it's because you missed the rainbow flower blog. So sorry!

Wednesday: Sloppy Joes on buns, veggie stix
Thursday: Bean goulash and salad or veggie stix leftovers
Friday: Homemade pizza and salad or veggie stix leftovers (See a theme? In the summer, I just prep a bunch and keep serving it until it's gone) and popcorn balls for desert
Saturday: Chicken wings, salad/veggie stix, potatoes
Sunday: Spaghetti, salad, garlic bread
