Pizza Dough
(Makes 2 12-inch pizzas)

4 cups all-purpose flour (plus a little more to coat the bowl)
1/2 ounce yeast
2 tsp coarse salt
1/4 cup olive oil

1. Measure the flour onto a clean work surface and make a well in the center. Dissolve the yeast in a bowl with 3/4 cup of lukewarm (baby bath temp) water. Place the yeast, salt, and olive oil in the well and, with a fork, work into the flour. Add more lukewarm water, as needed to make the dough elastic.

2. Dust a large bowl with flour. Place the dough in the bowl. Cover with plastic wrap and place in a warm place to rise until doubled, about 2 hours.
